I've heard of cars being on air suspension then when completely aired out, they sit on the frame making it impossible to steal the catalytic converters, steal the car if you disconnect or have a hidden switch for the sir system, and extremely difficult to tow away.

What would be the downsides to this?

air suspension, as far as suspension goes sucks. On the towing side of the house, apparently you have never a seen a tow truck in action. They can take anything, and they can do it quickly

I was thinking more or a wheel lift tow truck, like the ones mainly used to repo, than a rollback. Either way you will do substantial damage.

I think you are brining a shot gun to kill a fly. There are more effective ways to add security to your vehicle. Let's leave the air suspension as an aesthetic mod.
Then add shock and tilt sensor alarm for security.
