Took a trip to Vegas and at one point in Death Valley where it’s about 115 degrees I wanted to show my lady the power of the cat. So I stepped on it and at about 100mph the car would not go any faster with the pedal all the way down. Kind of concerned me but it seems fine now. Is there anything I should be worried about or should check out? Thanks guys.

No error lights. No CEL. No warning messages. I'd have to agree with Bradsredeye that you were using the black key.

However, AFAIK the black key doesn't specifically limit top speed just the amount of HP to IIRC 500HP. Even with just "500" HP that should be sufficient to get the car over 100mph. (Heck my VW Golf TDi with 90hp could hit 115mph.)

Or -- my WAG -- it may be possible you had the car in some "exotic" drive mode that required you to shift the automatic manually -- of course I'm assuming your car is equipped with an automatic transmission -- and you just didn't shift. But the engine would have hit the rev limiter and you didn't mention this.

If there was a problem while there was no CEL or other signs there might be a (proprietary) error code or two logged. To get these you would have take the car in and have it scanned for these codes. When I took my Hellcat in for a goofy +paddle shift problem the shop foreman scanned my car for proprietary codes and found several related to low voltage logged.

I am guessing ambient temperatures were affecting fueling so to safeguard the ECU reduced performance so you didn't melt anything. These cars run super warm on most regular days, I can only imagine what the intake temperature was if the outside air temp was above 115F

Not the heat. It's been 120° the last few days here and regularly 110° +. No issues like that. I don't think they even make the weeniest cars that can't hit 100mph. Sounds like operator error.

Seems like we would’ve heard about tracked cars having this issue, but we haven’t. Are you sure you weren’t manually shifted into 8th gear? It would be a slug in 8th, even at 100mph.
