I am 5' 8" and feel like my knee's are on the dashboard when i am positioned so that i can access the gas pedal on WOT, does anyone else have this issue?.

I love the redeye but feel it was designed for someone 6' or taller.

Are there any pedal options to help us 'shorter' individuals?

Im 5’9 and my RE fits me great. Do you have the power steering column? Back the steering wheel out towards you. Makes a huge difference.
EDIT: I read your post again. Your legs are too far away I guess. Steering adjustment prob wont help that but im basically the same height and tend to have the wheel pulled out further than most people for a shorter reach. My legs have never been an issue. I think you can def make it work, try messing with the column just for kicks.
So im no help to you lol.

6'2" here, but I drive with the steering wheel fully extended. I like the steering wheel very close, Nascar style, for increased control. I find the car to be very comfortable with great visibility.

Def the way you have the seat inclined. Pull the seat forward and recline a bit.

I'm also 5'9. I feel comfortable in both the Hellcat Challenger and the Scat pack Charger. Both are very comfy, which is reason #11 I bought both!

An old school saying I've heard before applies here:
"Adjust the seat front to back for function first. Make other adjustments to try and make it livable."
Do that. Once the pedals are perfect, then do the seat, then wheel. I found a less inclined and high seat position very comfortable and maximizes visibility.

And the shift in your position at WOT, you will get used to that! :)

Edit: Clarification: Move the seat fwd-back and height so the pedals are perfect, then do the seat incline, then wheel.
