If the gear swap or diff swap was done by the dealer and factory parts were used probably not. This is covered in the warranty booklet.

But if you just throw in a set of gears or replace the diff if the gear change is recognized -- signs of wrenching on the diff housing bolts and signs of wrenching on the diff bolts and maybe even the fact the serial number of the new diff may not be "right" -- then any drive train issue from at least the rear of the engine to the wheel bearings may not be covered under warranty.

And I dare say for a possible warranty claim the tech will inspect the area in question for any signs of abuse, misuse, maybe even take a fluid sample, and last but not least for any signs of any wrenching done that did not arise from some service or repair performed by a Dodge tech, which would be documented.

In fact it could be argued the gear change certainly affects the engine RPMs and thus this change might invalidate any warranty on the engine.

I'm guessing here. Depends on the dealership management. Since the diff is part of the driveline it potentially affects the axles, driveshaft, transmission, and potentially the engine too. If any of those parts are damaged because of a rear end failure they can potentially reject a warranty claim especially if you installed it yourself. On the other hand if you take it to Dodge and have them install it, it shouldn't be a problem especially if it is an available option on a new Hellcat.

For what reason? You can always just get a set of shorter tires and put them on when needed.

To get your best ET you need the tallest tire you can safely fit under the car, then gear the car accordingly
My 68 Valiant has a 30” tire with 4.56 gears. Still streetable and launches like a rodeo bull on the track

After some research tho I’ve decided to not do any mods anyway. I plan to leave the car 100% stock…. for a while

It depends on the dealer and what the issue is that requires warranty coverage,

You do realize that a 2.62 geared Hellcat actually has more overall gear than your Valiant with 4.56 gears.
HC 2.62x4.71=12.34
Valiant with 727----4.56x2.45=11.17
Valiant with 904-----4.56x2.70=12.31

If you are thinking of doing it for street fun and don't care about traction. Then I see the diff swap may be a good choice.
If traction is an issue and drag racing is the goal. Then keep the 2.62.
I have yet to be outrun in the 1/4 or 1/2 mile by another stock cat with a 3.09 gear.
Actually the 1/8 mile is about where my car starts being quicker than the others.

I know many or most don't agree with this.
That is ok with me as I am sharing my experience and opinion.
If you are using a 2.62 and cutting 1.6x 60' times on a good track. Then the 3.09 will likely be better.
If you stick with 2.62 and learn what the car likes then the 60' times should be 1.50x to
1.58 depending on weather.
Good fall air around 0 DA or better to summer at 3000DA.
Get to this point and the only gains from a 3.09 will basically be 60' times.

If I swap the gears or rear diff in a new Hellcat will it void my warranty?
When I was debating swapping the 2.62’s to the 3.09’s in my 20 redeye, the dealer told me if no other mods were done, and a dodge dealer does the swap, it will not effect the warranty. Otherwise it would. Just what I was told by them.
