Hello all, I ordered a 2021 Charger Hellcat Redeye yesterday. Was told about an 8 week delivery. This pretty accurate? TIA

Welcome. In normal times 8 weeks would be about right. With the chip shortage people have been waiting a month or two longer these days. Hopefully yours arrives quicker.

Not sure on the Chargers, but a buddy of mine recently received a 2021 Challenger Redeye... he waited almost 30 weeks.

Chip shortage, plant closure, etc. The more options you have, the longer it sits in the upfitter. It took me 5.5 months to get mine, but I took delivery in August 2020 during Covid and, I had just about all but 2 options you can get on a Hellcat, to include the painted satin graphics package (which apparently took them 2 weeks to do).
