Just ordered a '22 JB with the hammerhead grey leather. I want to keep it in fantastic condition, while also being able to spend time in the seat driving.

Is there a protectant (ceramic or something) that others use that will give me the greatest resistance to color transfer from like blue jeans and shorts? (As well as body sweat and such.)

The Laguna is fine so long as you keep it conditioned. At least every other month I use Zymol leather conditioner on all my leather (seats, dash, door panels, center console lid, shift boot). The product I use isn't required and you'd probably be just fine using California Gold, Meguiar's or some other premium leather cleaner/conditioner.

The trick is to never, and I stress NEVER use Armor All or similar shine enhancing products on it. These products will pull moisture out of the leather and could cause it to get brittle over time. Leather conditioners will keep it supple and prevent things like wear creases and wrinkles.

You will get a different answer from everybody that responds, pretty sure no two people treat their leather the same LOL.
I myself use Chemical Guys leather cleaner with a horsehair brush, then apply Chemical Guys Hydro leather.
After that has cured, I apply Chemical Guys leather conditioner.
I just did my Redeye, pics.

I have used both Chemical Guys and Meguiar's and I personally like the Meguiar's-gold-class-rich-leather--spray because I can get it local and it's a cleaner, conditioner and protectant (one step) process. I have another guy I know swears by LEXOL products he keeps telling me they have been making leather treatment products sense the 1930's so really I may try it on my wife new 2021 Charger Widebody Scat as I do not want to change what I have been using on my WBRE.

Op, your seats will over time, particularly the black seats, begin to pick up compession lines, mostly on the side bolsters.
I had semi good results with mothers leather conditioner, Meguairs seems to work just as good, maybe a bit better. I went very light on it regardless, on the seat areas that have ventilation, as the tiny vent holes can become clogged with garbage products like armor all.
Regarding the hammerhead grey...STRONGLY recommend you never wear blue jeans..for some odd reason, blue jeans, even old faded out ones, will absolutely transfer the dye to the seat leather and again, over time, the seat bottoms will start to show a bluish hue that cannot be removed. Id think this could also be an effect of reds as well.
Seat covers are an option, just be sure to keep them and the seats clean often.

I'm okay with them creasing over time. I'm more worried about transfer of color clothing and fabric from light to dark or the lighter fabric or leather of the seat showing color transfer from the clothes of the people that are driving it or riding in it. I'm only want to prevent discoloration versus creasing.

I've not owned a light grey or white Dodge leather interior. I have had a brilliant white leather interior in a 2017 Nissan Maxima (don't get me started on my hate for this car). I hated most everything about that car, but I can say no wrong about the leather seats. 2 years I drove that car daily and it never showed a sign of any color transference and I wear blue jeans almost exclusively. Modern leathers are a lot more forgiving and better treated than vinyl and leather seats from older vehicles. My thought on this though is that if a POS abortion of a car that is the 2017 Maxima has Napa seats that perform this well, surely a premium leather with better construction should do at least as well.

I think you have a bigger concern. I am also on a RAM forum for my truck, and guys have been showing pics their of the color rubbing off on the light grey interior, with Stellanis refusing to fix or replace it saying its normal wear and tear. I found it rather surprising. Good luck.,
