100% manual mode, no matter whether its on back roads or the interstate.
Out of the 18k miles I had my Hellcat A8, I might have used "D" for 1,000mi. Most of the time I shifted with the autostick set in manual mode. I hardly ever used the paddles.

I sometimes put my car in N only if I’m using the paddle shifters. Complete stop, put back in D. So it’s automatic again. I Don’t like using M for the paddles. I know the transmission should go back to automatic mode but I guess not soon enough.
I use the paddles mostly because Normal cruising kinda sucks with a 2.62 gear.

N, but I have an M6
My BMW SUV has an AUTO H button (automatic hold) on the center console that sets and releases the brake in stop and go traffic. More useful for traffic jams than regular city driving, and takes a little getting used to. The car won't move until you hit the gas pedal, which is a little disorienting if you're used to letting your car roll from a dead stop into a gradual acceleration after you release the brake pedal.
