Looking to buy a Demon but will there ever be something better? I don't want to buy it and then next year have another version or a better super stock that is even meaner?

Serious doubt it. Only 2 years max left for the current platform challenger, Dodge wont release any significant upgrades at this point as there wouldn't be enough model years left for them to profit off it.

At least three years left now. Stellantis will be releasing the electric 2024 alongside the existing platform for a minimum of a year. Possibly a couple.

With 14 Demons on ebay alone, I think owners are selling while the selling is good. The Super Stock watered it down a little. Especially the 2020 with less than 200 built.

2022 will be 807.5HP followed by 2023 807.75HP as a final send off to allow the Demon remain King of the HP Hill as Tim K promised. Perhaps new final edition stitching and decal packages will be available.
